July: A Steeped Midwinter

Three flavours with a pot of tea running through every one of them — smoke from Lapsang Souchong in the first, Seimei Matcha in the second, Genmaicha in the poaching pan of the third.

A Steeped Midwinter is all about having a warm mug or cup of tea beside you. Three of each; when July’s box is gone, flavours retire to the bench and August is on.

LAPSANG SOUCHONG: A water-based ganache — no cream or butter in the emulsion. Dairy softens the nuances of the tea’s unique sweet smoke into the background; water allows you to taste it the way it should be. Lapsang Souchong is the tea I drink more than any other — there’s a pot of it beside me as I write this — and this bonbon is as close as I can get you to that first hot sip: smoke, malt, and a gentle, quiet finish.

MATCHA & TOASTED BUCKWHEAT: Two layers working against each other on purpose. The first is a ganache of Seimei Matcha from The Steepery Tea Co. — creamy, not grassy and not to sound corny, but almost feels like something soulful. The second is toasted buckwheat: earthy, nutty, and BASIK Chocolates fans can rejoice at this textural combination. Crisp against cream.

KUMQUATS, COCONUT & MINT: Kumquats are the midwinter treat in A Steeped Midwinter — at their absolute peak in a Queensland July, and gone within weeks. We poach them gently in an infusion of Genmaicha tea and a Hon Mirin (Mikawa), then set them into a bright gel for the first layer. Over it sits a soft ganache of coconut and vanilla bean, with mint infused directly into the coconut and vanilla — so the mint arrives as a cool undertone, not a toothpaste headline.

The July Standard

Every order in July is accompanied with Smoked Milk Chocolate Honeycomb — a 100g bag of confectionery honeycomb dipped in smoked milk chocolate, finished with Fleur de Sel Guérande. All orders. Any size. No code, no minimum.
