Daydreaming Part II…

August Selections’ are a sequel to July’s Daydreaming featuring another kaleidoscope of experiments and ideas that I have been dreaming of until now…

A couple of new combinations & ingredients - a lightly toasted Ancho Chilli caramel to open up the palate, followed by a take of two “splices” of Vanilla, but with all three core chocolates featured - Dark, Milk & White in a bonbon. A hopeful follow up to the epic Kumquat and Mirin bonbon from last month, which had the BASIK Chocolates fans in awe at our recent events — a Shiro Tamari that is similar to a Shiro Soy — obviously without Soy-Beans. A combination of two alternative grains Toasted Buckwheat featured side by side for their contrasting flavours as well as their nuances.

And in between all of this an experiment with Raspberries & Red Shiso Leafs...at this point, I don’t even know the outcome but just like you, I’m beyond excited to explore all of this!
